Stir Fry Noodles

Ingredients

  • 8 oz Rice noodles or your preference of noodle
  • 2 tbsp Extra-virgin olive oil
  • 1 tbsp Sesame oil
  • 1/2 Green bell pepper sliced
  • 1/2 Red bell pepper sliced
  • 1/2 Onion chopped
  • 3 oz Mushrooms sliced
  • 2 stalks Celery sliced
  • 2 tsp Fresh ginger minced
  • 2 cloves Garlic minced
  • 1/4 cup Chicken broth
  • 4 tbsp Reduced-sodium soy sauce
  • 2 cups Broccoli cut into florets

Instructions

  • In a pot of salted boiling water cook the noodles according to the directions on the package. Drain well.
  • In a nonstick pan on medium heat, heat both oils. Add in the peppers, onions, mushrooms, and celery. Saute for 4 - 5 minutes. Then add the garlic and ginger and cook for 1 minute. Add the chicken broth and soy sauce; bring to a simmer.
  • Add the broccoli, cover with a lid and cook for 3 - 4 minutes. Stir in the noodles and serve.
