Steak Skillet

Ingredients

  • 2 tbsp Extra-virgin olive oil
  • 1 Potatoes peeled and shredded
  • 1/2 Onion diced
  • 1/2 Green bell pepper seeded and diced
  • 8 oz Sirloin steaks sliced thin
  • 2 oz Cheddar cheese shredded
  • 8 Eggs
  • 4 slices Multigrain bread toasted (or your choice of bread)
  • 1/2 Pineapple peeled and sliced

Instructions

  • Preheat the oven broiler on low.
  • Heat oil in a nonstick pan over medium heat. Add the potatoes; season with salt and pepper and saute for 3 - 5 minutes.
  • Add in the onion and pepper. Stir and cook until the potatoes are tender. Lay the sliced steak on top and season with salt.
  • With the back of a spoon, make evenly spaced pockets in the potato mixture. Sprinkle the cheese over top and crack an egg into each pocket. Season with salt.
  • Place the pan in the oven underneath the oven broiler, cook about 4 - 6 minutes until the whites of the eggs are firm.
  • Toast the bread, divide the skillet into portions and serve with sliced pineapple.
