Instructions
Preheat the oven broiler on low.
Heat oil in a nonstick pan over medium heat. Add the potatoes; season with salt and pepper and saute for 3 - 5 minutes.
Add in the onion and pepper. Stir and cook until the potatoes are tender. Lay the sliced steak on top and season with salt.
With the back of a spoon, make evenly spaced pockets in the potato mixture. Sprinkle the cheese over top and crack an egg into each pocket. Season with salt.
Place the pan in the oven underneath the oven broiler, cook about 4 - 6 minutes until the whites of the eggs are firm.
Toast the bread, divide the skillet into portions and serve with sliced pineapple.
