Preheat grill or grill pan on medium heat. Season both sides of the steak with steak seasoning. Grill the steak to your desired temperature using a thermometer (see below). Let rest for 5 to 10 minutes. Slice thin against the grain right before serving.
For the dressing: whisk together all ingredients until fully combined. Season with salt and pepper to taste. Adjust the ingredients to taste.
Serve the steak over the spring mix and drizzle with about 1 tablespoon of the dressing on top or more if desired (do not over dress the salad). Top with cucumber, tomato, onions, chickpeas, carrots, and blue cheese. Serve with bread.
