Prep the ingredients per the instructions above.
Make the salsa: Add all ingredients (except the tortilla chips) to a bowl and mix well. Season with salt and pepper to taste. Refrigerate until you are ready to serve.
Heat a non-stick pan over medium heat.
Add the oil to the pan. Sauté the onion and peppers until they start to soften. Then add in the steak, paprika, garlic powder, and cumin, and season with salt and pepper. Continue to sauté until nicely browned. Then remove the pan from the heat.
Make the sauce: In a bowl mix all the ingredients for the sauce until fully combined.
Spread the cheese onto the tortilla and top with the steak mixture, then fold the tortilla in half.
Cook the quesadilla in the same pan until golden brown on both sides and the cheese is melted. Add a little oil if needed for cooking.
Make the mocktail: mix all ingredients together. Add the honey and lime to taste. Serve over ice if desired.
Serve: Cut the quesadilla into wedges. Enjoy with ranchero sauce, chips and salsa, and mocktail.
