Spicy southwestern Turkey and Mac, Zuchini, Corn, Poblano Pepper, Cucumber Water, Vanillle Ice Cream with Banana

Ingredients

Cucumber Water

  • 1/2 Cucumber sliced
  • 16 oz Water
  • Ice cubes (optional)

Roasted Zucchini, Corn, and Poblano Peppers

  • 1 cup Zucchini cut into chunks
  • 1 cup Corn
  • ½ cup Poblano pepper seeded and diced
  • 1 tsp Extra-virgin olive oil
  • Salt to taste
  • Black pepper to taste

Spicy Southwestern Turkey and Mac

  • 4 oz Elbow macaroni or your preferred pasta
  • 8 oz Ground turkey
  • 1 tsp Extra-virgin olive oil
  • 1 cup Onion diced
  • 1 cup Bell pepper diced (red or green)
  • 1 clove Garlic minced
  • 1/2 tsp Ground cumin
  • 1/2 tsp Chili powder
  • 1/4 tsp Smoked paprika
  • Salt to taste
  • Black pepper to taste
  • 1 TBSP Tomato paste
  • 1/2 cup Chicken broth or water
  • 1/4 cup Cheddar cheese shredded

Vanilla Ice Cream + Sliced Bananas

  • 1 cup Vanilla ice cream
  • 1 Banana sliced

Instructions

  • Prepare the ingredients as instructed.
  • Prepare the cucumber water: Add sliced cucumber to water. Let infuse in the refrigerator.
  • Preheat the oven to 400°F (200°C).
  • Place the zucchini, poblano peppers, and corn on a baking sheet. Drizzle with olive oil, season with salt and pepper and toss.
  • Roast the zucchini, corn, and poblano peppers in the oven for 20–25 minutes, turning the vegetables halfway through. The zucchini should be tender and golden, the corn slightly charred, and the poblano peppers softened.
  • Cook the Pasta: Bring a pot of water to a boil. Salt the water. Cook the pasta according to package instructions. Drain and set aside.
  • Cook the Turkey: heat olive oil in a large skillet over medium heat. Saute the diced onion, bell pepper, and garlic until softened. Add the ground turkey, cumin, chili powder, smoked paprika, salt, and pepper, breaking it up until nicely browned.
  • Stir in the tomato paste and cook for 1 minute. Add chicken broth (or water) and stir to create a sauce. Simmer for 3–4 minutes until the sauce thickens slightly.
  • Stir in the pasta and cheese until well combined.
  • Prepare Vanilla Ice Cream + Bananas: Scoop ice cream into a bowl. Add sliced bananas on top and serve.
  • Serve the turkey and mac with roasted vegetables, cucumber water and ice cream.
