Smothered Burrito

Ingredients

  • 1/2 lb Ground beef
  • 1/2 tsp Chili powder
  • 1/2 tsp Ground cumin
  • 1/4 tsp Garlic powder
  • 1/4 tsp Dried oregano
  • 1/2 tsp Paprika
  • 1/4 tsp Cajun seasoning
  • 1 tsp All-purpose flour
  • 3/4 cup Chicken broth
  • 2 large Whole wheat tortilla
  • 1/2 cup Refried beans
  • 2 tsp Sour cream
  • 1 cups Romaine lettuce shredded
  • 1/4 cup Tomato diced
  • 1 tbsp Fresh cilantro chopped

Instructions

  • Heat a non-stick pan over medium heat; Once hot, crumble in the ground beef. Add in the chili powder, cumin, garlic powder, oregano, paprika, cajun seasoning, and season with salt. Brown the beef while breaking it up into smaller pieces until it is no longer pink. Stir in the flour then the broth. Adjust the heat to a low simmer for about 8 to 10 minutes.
  • Heat a nonstick pan on medium heat. Warm the tortilla's on both sides then set aside. Add the refried beans to the pan and stir until they are wamred through.
  • Lay the tortillas on a flat surface and spread the beans into the center. Using a slotted spoon top with ground beef reserving the liquid in the pan. Fold in the ends and roll up tightly.
  • Spoon the sauce over the burrito. Top with sour cream.
  • Serve with shredded lettuce and tomato on the side. Garnish with cilantro.
