Smothered Breakfast Wrap

Ingredients

Gravy

  • 1 tsp Extra-virgin olive oil
  • 6 oz Ground sausage
  • 2 tsp All-purpose flour
  • 1.5 cups Milk
  • 2 tbsp Fresh parsley chopped

Instructions

  • For the gravy: Heat the oil in a saucepan over medium heat. Brown the sausage breaking it up into smaller pieces as it cooks. Stir in the flour and cook while stirring until the flour turns golden brown. Whisk in the milk and bring to a simmer until it starts to become thick and smooth. Season with salt and pepper to taste. Cover with a lid and set aside.
  • Heat the oil in a non-stick pan over medium heat. Add the eggs and cheese into the pan. Move the eggs using circular motions with a spatula or wooden spoon to fluff up and cook, (move the pan on and off the heat as needed to prevent the eggs from overcooking or drying out). Remove the pan from the heat while the eggs are still moist.  Season with pepper. Taste and add salt if needed. 
  • Place the eggs into the wrap, fold in the ends and roll up tightly. Place the wrap seam side down in the pan until golden brown then flip over and do the same to the top.
  • Serve the sausage gravy over the wrap with apples. Garnish with parsley.
