Smoked Salmon Scrambled Eggs and Bagel

Ingredients

Bagel and Eggs

  • 1 Your choice of bagel halved and toasted
  • 4 TBSP Whipped cream cheese
  • 2 TBSP Butter
  • 4 Eggs beaten
  • 2 oz Smoked salmon chopped
  • Salt to taste
  • Black pepper to taste
  • 1 tsp Fresh dill garnish

Orange Juice

  • 16 oz Orange juice

Instructions

  • Prepare the ingredients per the instructions above.
  • Lightly toast the bagel. Then spread the cream cheese onto the bagel.
  • Heat a nonstick pan over medium-low heat. Add the butter and eggs. Stir the eggs continuously using circular motions with a spatula or wooden spoon to fluff them up and cook. Once the eggs are starting to set gently fold in the salmon. (Move the pan on and off the heat as needed to prevent the eggs from overcooking or drying out.) Remove the pan from the heat before the eggs become dry, while they are still moist. Season with salt and pepper to taste. Garnish with dill.
  • Serve the eggs with the bagel and orange juice.
