Heat a sauté pan on medium heat. Add the oil and butter to the pan.
Season the sliced potato with salt and pepper. Arrange the potatoes in the pan in a flat layer and cook until they turn golden brown. Then flip the potatoes over and transfer the pan to the oven. Cook until tender.
Adjust the seasoning with salt if needed before serving.
