Shrimp Fried Rice Bowl

Ingredients

  • 3/4 cup White rice rinsed
  • 2 tbsp Extra-virgin olive oil
  • 1 Carrots peeled and diced small
  • 1 cloves Garlic minced
  • 4 oz Mushrooms sliced
  • 1 tbsp Fresh ginger minced
  • 1 lb Shrimp peeled and deveined tail off
  • 1 tsp Rice wine vinegar
  • 1 tbsp Sesame oil
  • 1/4 cup Reduced-sodium soy sauce
  • 3 cups Snow peas
  • 4 Scallions chopped

Instructions

  • Rinse the rice well with cold water and drain. Cook the rice according to the directions on the package. Season well with salt and pepper. Once the rice is cooked drain any excess water if necessary.
  • Heat the olive oil in a nonstick pan over medium heat. Add the carrots, garlic, mushrooms, and ginger and cook, stirring often, until the carrot starts to soften, 5 - 6 minutes. Add the shrimp, cooked rice, rice vinegar, sesame oil, and soy sauce. Stir well. Saute for 3 - 4 minutes.
  • Add in the snow peas and saute for another 3 - 4 minutes.
  • Remove from heat, stir in the scallions. Taste and adjust the seasonings by adding more salt or soy sauce before serving. Garnish with scallions.
