Cut the potatoes into thin slices about a 1/4-inch thick.
Then cut the slices into matchsticks.
Soak them in cold water for 10 minutes. Drain the water and pat them dry with a paper towel.
Fry the potato sticks (in batches if needed) in the oil until golden brown and crispy. Place on a paper towel-lined sheet to drain the excess oil and season with salt and pepper to taste right away. Garnish with parsley. Serve immediately.
