Instructions
Preheat the oil in a pot on medium heat.
Cut the potatoes into very thin matchstick strips and soak them in cold water for 5 minutes. Drain the water and pat them dry with a paper towel. Then toss them with salt, pepper, and garlic powder.
Fry the potato sticks in batches in the oil until golden brown. Place on a paper towel lined sheet to drain the excess oil and season with salt and pepper right away.
