Ham Poblano Wrap, Kimchi, Berries, Coffee

Ingredients

Ham Poblano Gouda Wrap

  • 1 tsp Extra-virgin olive oil
  • ½ cup Poblano pepper diced
  • 2 oz Deli ham diced
  • 1 cup Baby spinach fresh
  • 4 Eggs
  • Salt to taste
  • Black pepper to taste
  • 1/3 cup Smoked gouda cheese shredded
  • 2 Whole wheat tortilla wraps burrito size

Kimchi

  • 1/2 cup Kimchi

Berries + Chia Seeds

  • 2 cups Mixed berries e.g. blackberries, raspberries, strawberries, blueberries
  • 1 tsp Chia seeds

Coffee

  • Coffee brewed using preferred method
  • Sweetener optional
  • Creamer optional

Instructions

  • Prepare all ingredients as listed.
  • Heat oil in a nonstick skillet over medium heat. Add the diced poblano pepper and cook until softened. Add the diced ham and cook until lightly browned. Add the fresh spinach and cook just until wilted.
  • In a bowl, whisk the eggs with salt, and black pepper. Pour into the skillet and cook, stirring gently, until mostly set but still soft.
  • Sprinkle the shredded smoked Gouda over the eggs and continue cooking gently until the cheese is melted and the eggs are fully cooked. Remove from heat.
  • Warm the whole wheat wraps in a dry skillet or microwave until pliable.
  • Brew and prepare the coffee to your liking.
  • Portion the egg mixture onto the wraps. Fold in the sides and roll up tightly. Cut in half if desired.
  • Serve the wrap with kimchi, berries with chia seeds and coffee.
