Scrambled Eggs with Ham

Ingredients

Eggs

  • 1/2 TBSP Extra-virgin olive oil
  • 4 oz Deli ham chopped
  • 1/3 cup Green bell pepper diced small
  • 1 TBSP Butter plus more for the toast
  • 4 Eggs beaten
  • 2 slices Sourdough bread toasted

Beverage

  • 16 oz Orange juice cold

Instructions

  • Prep ingredients per the instructions above.
  • Heat a non-stick pan over medium heat. Once hot, add the oil. Saute the peppers until softened then add in the ham and saute for 1 to 2 minutes more. Add in the butter and eggs and reduce the heat to medium-low. Use a spatula to move the eggs around the pan in circular motions until cooked and no longer runny.
  • Make toast: Toast the bread. Spread with butter.
  • Serve: Enjoy the eggs with toast and orange juice.
