In a nonstick pan on medium heat, brown the sausage, breaking it up into crumbles until it is no longer pink. Add in the spinach and saute until it is wilted.
Check if there is enough fat in the pan from the sausage, (if not add olive oil as needed) if there is then add in the eggs and move them around using a spatula until they are no longer runny. Remove from the heat and stir in the cheese.
Place the eggs onto a pita, fold in half and serve with orange sections.
