  • Lightly toast the English muffin.
  • Heat a non-stick pan over medium heat. Once hot, add the oil. Brown the sausage while breaking it up into smaller pieces until it is no longer pink.
  • Add the eggs and cheese into the pan. Season with salt and pepper. Stir using quick circular motions until the egg starts to solidify, then stop stirring. Once the eggs have mostly set up to where they are solid flip them over using a spatula and cook for a few seconds more until no longer runny. Then remove from the heat.
  • Portion and place on the english muffin. Serve with mango.
