Toast the bagels.
Crack the eggs into separate bowls without breaking the yolks.
Set a skillet or frying pan over medium heat.
Prepare the fruits by washing and cutting them as desired.
Brew and prepare the coffee to your liking.
Cook the sausage patties in the skillet over medium heat. Cook for about 3-4 minutes per side to an internal temperature of 150F using a thermometer.
Once cooked, transfer place them on the bagel.
Using the same skillet, add a bit of butter or cooking oil. Add the eggs gently into the skillet and cook them until the whites start to firm up then flip them over and cook for 30 seconds longer. Season with salt and pepper to taste.
Place a slice of cheese on the sausage, followed over-easy eggs. Add the top half of the bagel to complete the sandwich.
Serve the bagel breakfast sandwiches with a side of mixed fruit, and coffee.
