Ingredients

  • 8 oz Breakfast sausage links about 2 per serving depending on how big they are
  • 2 tsp Extra-virgin olive oil
  • 8 Eggs
  • 4 tbsp Roasted Garlic Vegetable Cream Cheese or cream cheese of your preference
  • 2 Onion bagels lightly toasted
  • 1 Grapefruit peeled and sectioned, sprinkled with sugar if desired (Check the Fruit guide to substitute seasonal fruits
  • Sugar optional

Instructions

  • For the sausage: cook in a 400°F oven until browned on all sides to an internal temperature of 150°F using a thermometer. 
  • Heat a nonstick pan on medium heat. Once hot, add the oil and crack the eggs into the pan being careful not to break the yolks. Cook until the whites of the eggs start to firm up, add 1 to 2 tablespoons of water to the pan and cover with a lid. Cook until the whites are firm. Season with salt and pepper.
  • Spread the cream cheese onto the bagel.
  • Serve the eggs with sausage links, bagel, and grapefruit.
