Salmon Toast

Ingredients

  • 4 oz Cream cheese softened
  • 2 tsp Fresh chives chopped, plus more for garnish
  • 1 TBSP Fresh dill plus more for garnish
  • 1/4 tsp Flaky sea salt
  • 1/4 tsp Black pepper
  • 1/8 tsp Cayenne pepper optional
  • 1/8 tsp Lemon zest
  • 1 tsp Lemon juice
  • 12 slices Snack rye bread small tea sandwich slices
  • 8 ounces Smoked salmon or lox
  • 1 cup Carrots peeled and cut into 3 inch sticks
  • 4 TBSP Ranch dressing

Cranberry Lime Spritzer

  • 16 oz Cranberry Juice
  • 2 tsp Lime juice
  • 8 oz Sparkling water

Instructions

  • Preheat broiler on low.
  • In a small bowl, beat the cream cheese, scallions, dill, salt, pepper, cayenne (if using), lemon zest, and lemon juice.
  • Place bread slices on baking sheets. Broil for 1-2 minutes on each side or until lightly toasted. Spread with cream cheese mixture; top with lox.
  • Prep the carrots per the instructions above.
  • Mix all the ingredients for the spritzer. Serve over ice if desired.
  • Serve the salmon toast, garnish with chives and dill, enjoy with carrot sticks and ranch, and spritzer.
