Salami & Eggs Breakfast Wrap

Ingredients

  • 1 tbsp Extra-virgin olive oil
  • 4 oz Salami diced
  • 8 Eggs scrambled
  • 2 oz Fontina cheese shredded
  • 4 Whole wheat tortilla
  • 1 cup Cottage Cheese
  • 1 Mangos peeled cored and diced

Instructions

  • Heat oil in a nonstick pan on medium heat. Add in the salami and saute for 30 seconds.
  • Pour the eggs into the pan. Fold the eggs around the pan using a rubber spatula until they are start to firm up and no longer runny; remove from heat while they are still moist before they start to get dry and mix in the cheese.
  • Spoon the eggs onto the wrap, fold in the ends and roll up. Cut in half and serve with cottage cheese and mango.
