Roasted Eggplant & Tomatoes

Ingredients

  • 3 cups Eggplant diced into bite sized pieces
  • 2 tbsp Extra-virgin olive oil
  • 1/4 tsp Dried oregano
  • 2 cups Grape tomatoes
  • 2 cloves Garlic cut into chunks

Instructions

  • Preheat the oven to 375 degrees.
  • Line a baking sheet with foil. Toss all ingredients together and season well with salt and pepper.
  • Roast in the oven until tender.
  • Season with salt and pepper to taste before serving.
