Roast Beef Pita

Ingredients

  • 4 Pita bread
  • 2 cups Baby spinach
  • 12 oz Deli roast beef
  • 2 oz Potato chips
  • 1 cup Pickles sliced into rounds or half moons

Chickpeas

  • 2 tbsp Red bell pepper chopped small
  • 2 tbsp Kalamata olives chopped
  • 2 tbsp Red onion chopped small
  • 1 cup Chickpeas
  • 1/4 cup Cucumber chopped small
  • 1/2 cup Greek yogurt
  • 8 Grape tomatoes chopped
  • 1 clove Garlic
  • 2 tsp Lemon juice
  • 2 tbsp Fresh dill chopped

Instructions

  • Mix all of the ingredients for the chickpeas in a bowl. Season with salt and pepper to taste. Set aside.
  • Warm the pita on both sides in a pan over medium heat.
  • Layer the pita with spinach, chickpea mixture, and beef. Fold in half and serve with chips and pickles.
