Roast Beef Pita

- 4 Pita bread
- 2 cups Baby spinach
- 12 oz Deli roast beef
- 2 oz Potato chips
- 1 cup Pickles sliced into rounds or half moons
Chickpeas
- 2 tbsp Red bell pepper chopped small
- 2 tbsp Kalamata olives chopped
- 2 tbsp Red onion chopped small
- 1 cup Chickpeas
- 1/4 cup Cucumber chopped small
- 1/2 cup Greek yogurt
- 8 Grape tomatoes chopped
- 1 clove Garlic
- 2 tsp Lemon juice
- 2 tbsp Fresh dill chopped
Mix all of the ingredients for the chickpeas in a bowl. Season with salt and pepper to taste. Set aside.
Warm the pita on both sides in a pan over medium heat.
Layer the pita with spinach, chickpea mixture, and beef. Fold in half and serve with chips and pickles.
