Roast Beef Pepper Jack Sandwich

Ingredients

  • 12 oz deli roast beef
  • 4 rolls
  • 4 tbsp Mayonnaise
  • 1/2 Red bell pepper core and seeds removed and cut into chunks
  • 4 oz Pepper jack cheese
  • 8 leaves Romaine lettuce
  • 12 slices tomato
  • 4 pickles halved

Instructions

  • In a blender or food processor pulse the mayo and red pepper until smooth. Season with a pinch of salt and pepper.
  • Spread the inside of the roll with red pepper mayonnaise and layer with lettuce, tomato, roast beef, and pepper jack cheese. Cut in half and serve with pickles.
