Roast Beef Monterey Sandwich

Ingredients

  • 8 slices Sourdough bread lightly toasted (or bread of your choice)
  • 4 tsp Mayonnaise
  • 4 tsp Dijon mustard
  • 8 leaves Romaine lettuce
  • 12 oz Deli roast beef sliced thin
  • 12 slices Tomato
  • 4 oz Monterey jack cheese sliced
  • 4 Pickle spears
  • 4 oz Potato chips

Instructions

  • Lightly toast the bread to a golden brown but still somewhat soft.
  • Spread the mayo and mustard on each slice of bread, layer with romaine, roast beef, tomatoes seasoned with salt and pepper, and cheese.
  • Cut in half and serve with pickles and chips.
