Roast Beef Monterey Sandwich

- 8 slices Sourdough bread lightly toasted (or bread of your choice)
- 4 tsp Mayonnaise
- 4 tsp Dijon mustard
- 8 leaves Romaine lettuce
- 12 oz Deli roast beef sliced thin
- 12 slices Tomato
- 4 oz Monterey jack cheese sliced
- 4 Pickle spears
- 4 oz Potato chips
Lightly toast the bread to a golden brown but still somewhat soft.
Spread the mayo and mustard on each slice of bread, layer with romaine, roast beef, tomatoes seasoned with salt and pepper, and cheese.
Cut in half and serve with pickles and chips.
