Roast Beef Gruyere Sandwich

- 8 slices Sourdough bread lightly toasted (or bread of your choice)
- 4 tbsp Mayonnaise
- 4 tbsp Brown mustard
- 2 cups Spring mix
- 12 oz Deli roast beef sliced thin
- 12 slices Tomato
- 4 oz Gruyere cheese sliced
- 4 Pickles halved
- 4 oz Potato chips
Lightly toast the bread to a golden brown but still somewhat soft.
Spread the mayo and mustard on each slice of bread, layer with spring mix, roast beef, tomatoes seasoned with salt and pepper, and cheese.
Cut in half and serve with pickles and chips.
