Roast Beef Brie Sandwich

Ingredients

  • 8 slices Sourdough bread lightly toasted
  • 4 Tbsp Mayonnaise
  • 2 tsp Chipotle Sauce
  • 12 slices Tomato
  • 2 cups Baby spinach
  • 12 oz Deli roast beef
  • 1/4 Red onion sliced thin
  • 4 oz Brie cheese sliced
  • 4 Pickles halved
  • 4 oz Corn chips Fritos or comparable brand

Instructions

  • Toast the bread. In a bowl mix together the mayo and chipotle sauce. Spread the mayo onto the bread.
  • Layer the bread with tomato seasoned with salt and pepper, spinach, roast beef, onion, and brie. Cut in half and serve with pickles and corn chips.
