Roast Beef Balsamic Onion Wrap w/ Roasted Garlic Mayo

Ingredients
12ozdeli roast beef
4ozProvolone cheese
4Tortilla wraps8 inch
12slices tomato
1Red onionpeeled and sliced
3cupsBaby spinach
1/4cupBalsamic vinegar
1tspExtra-virgin olive oil
4tbspMayonnaise
3clovegarlicpeeled whole
Instructions
Preheat the oven to 375 degrees. Wrap the garlic cloves in tin foil and bake for about 15 minutes until golden brown and soft.
Heat the oil in a nonstick pan on medium heat. Add the onions and saute for 2 -3 minutes. Add the balsamic vinegar and season with salt and pepper. Cook for 5 - 6 minutes, until the onions are tender.
In a bowl mash the garlic and mayo together.
Spread the mayo on the wrap, layer with roast beef, tomato, baby spinach, balsamic onions, and cheese. Cut in half and serve with sweet potato chips (see recipe) on the side.
