Roast Beef Balsamic Onion Wrap w/ Roasted Garlic Mayo

Ingredients

  • 12 oz deli roast beef
  • 4 oz Provolone cheese
  • 4 Tortilla wraps 8 inch
  • 12 slices tomato
  • 1 Red onion peeled and sliced
  • 3 cups Baby spinach
  • 1/4 cup Balsamic vinegar
  • 1 tsp Extra-virgin olive oil
  • 4 tbsp Mayonnaise
  • 3 clove garlic peeled whole

Instructions

  • Preheat the oven to 375 degrees. Wrap the garlic cloves in tin foil and bake for about 15 minutes until golden brown and soft.
  • Heat the oil in a nonstick pan on medium heat. Add the onions and saute for 2 -3 minutes. Add the balsamic vinegar and season with salt and pepper. Cook for 5 - 6 minutes, until the onions are tender.
  • In a bowl mash the garlic and mayo together.
  • Spread the mayo on the wrap, layer with roast beef, tomato, baby spinach, balsamic onions, and cheese. Cut in half and serve with sweet potato chips (see recipe) on the side.
