Mix together the ingredients for the cucumber water. Refrigerate until service.
Spread the dressing on one side of each slice of bread, and use more or less as preferred. Layer the bread with a slice of cheese, sauerkraut, corned beef, and cheese. Top with a slice of bread. Spread the butter on the outside of each bread slice.
Preheat a nonstick skillet over medium heat. Cook the sandwich on both sides until golden brown and the cheese is melted.
Slice the sandwich in half and serve with carrot sticks, ranch, and cucumber water.
