Ingredients

  • 1 cup Refried beans
  • 4 tbsp Monterey jack cheese shredded
  • 2 tbsp Tomato diced
  • 2 tbsp Red onion minced

Instructions

  • Preheat the oven to 375°F.
  • In an oven safe pan over medium-low heat, add the refried beans. Let cook, stirring occasionally. Add 1-2 tablespoons of water if needed to soften them up. Season with salt and pepper to taste.
  • Once the beans are soft, top with cheese and melt in the oven.
  • Garnish with tomato and onion.
