Heat the oven to 400 degrees. Cook the sausage to an internal temperature of 155 degrees using a thermometer.
In a shallow baking dish, whisk eggs, milk, pumpkin puree, vanilla, pumpkin spice, and a pinch of salt. Place bread slices into pumpkin mixture and let soak for about 30 seconds per side.
Make the pumpkin butter: In a medium bowl, whip softened butter with pumpkin, pumpkin spice, and a pinch of salt until light and fluffy.
In a large nonstick skillet over medium-low heat, melt the butter as needed. Cook each slice until golden, 3 to 4 minutes per side. Repeat to cook all slices.
Top French toast with pumpkin butter, sprinkle with powdered sugar and drizzle with maple syrup. Enjoy with sausage and orange juice.
