Prep the ingredients per the instructions above.
Preheat the air fryer to 400°F (200°C).
Prepare the Air Fryer French Fries: Place the cut potatoes in a bowl and drizzle with olive oil. Toss to coat the fries evenly with the oil. Sprinkle with salt to taste. Transfer the fries to the air fryer basket in a single layer, making sure they are not overcrowded. Cook the fries in the air fryer for about 15-20 minutes, shaking the basket halfway through, until they are golden and crispy. Remove the fries from the air fryer and season with salt and pepper to taste.
In a bowl, combine the olive oil, minced garlic, dried oregano, paprika, ground cumin, salt, and pepper. Add the thinly sliced pork loin to the bowl and mix well, ensuring the pork is coated with the marinade. Let it marinate for at least 10 minutes or up to overnight in the refrigerator.
While the pork is marinating, prepare the tzatziki sauce. In a separate bowl, combine the Greek yogurt, grated and drained cucumber, minced garlic, lemon juice, chopped fresh dill, salt, and pepper. Mix well and refrigerate until ready to serve.
Heat a grill pan or skillet over medium-high heat. Cook the marinated pork slices for about 4-5 minutes per side or until cooked through and nicely browned. Remove from heat and let it rest for a few minutes.
While the pork is resting, warm the pita bread in a nonstick pan over medium heat.
To assemble the gyros, spread a generous amount of tzatziki sauce on each warmed pita bread. Add the cooked pork slices and top with sliced tomatoes, onions, and lettuce.
Mix the sparkling water with lemon.
Serve with french fries and sparkling water.
