Pommes Aligot

Ingredients

  • 3 cups Yukon gold potatoes peeled and diced
  • 4 tbsp Butter
  • 2 tbsp Heavy cream
  • 1/4 cup Gruyere cheese shredded
  • 1/4 cup Brie cheese diced small

Instructions

  • Peel and cut potatoes into bite-sized chunks so they all cook evenly
  • Place in a pot with cold water and on high heat, once they come to a boil turn the heat down to a simmer. Cook until tender, a fork slides in and out with ease. Take off the heat and strain out all of the water.
  • Pass the potatoes through a ricer or food mill to finely mash them.
  • Place the pot back over medium heat. Melt the butter then stir in the cream and cheese's. Stir until the cheese melts. Stir in the potatoes, season with salt and pepper to taste. Keep stirring until the mixture is well combined and gooey.
  • Serve right away.
