Preheat the grill on medium heat. (can also be made in the oven preheated to 400 degrees if not using a grill)
Toss the chicken wings in a bowl with oil, paprika, and oregano; season generously with salt and pepper.
Make sure the grill is hot. Place the wings on the grill and cook on both sides, about 6 - 8 minutes per side. Check the internal temperature with a thermometer to reach 160 degrees. (Allow the wings to get a nice char but not burn, adjust the heat level accordingly)
Meanwhile in a saucepan on medium high heat add the sugar, soy sauce, rice wine vinegar, ginger, pineapple juice, and garlic. Heat to a boil. Then reduce heat and simmer until sauce is reduced half--it should look like a thin syrup when it's done. This should take about 10-15 minutes.
When the wings are cooked toss them with the sauce. Garnish with scallions.
