Pierogi Pie

Ingredients

  • 10 Pierogies 8 to 10 pierogies depending on size
  • 1 tbsp Butter
  • 2 oz Smoked sausage minced
  • 1/4 cup Cheddar cheese shredded
  • 1/4 cup Swiss cheese shredded
  • 2 tbsp Scallions chopped
  • 4 tsp Sour cream

Instructions

  • Preheat the oven broiler on low.
  • In a pot of boiling water, cook the pierogies according to the directions on the package. Drain and set aside.
  • Lightly grease a casserole or baking dish with butter. Distribute the pierogies in the baking dish overlapping them so they are close together. Melt the remaining butter and drizzle it over the top of the pirogies.
  • Top with sausage, cheese, and half of the scallions. Broil in the oven until the cheese is melted and everything is golden brown.
  • Serve with sour cream. Garnish with scallions.
