Pickled Onion and Tomato

Ingredients

  • 1/4 cup Red onion shaved
  • 3 tbsp Red wine vinegar
  • 1 cup Grape tomatoes halved
  • 2 tsp Extra-virgin olive oil
  • 1 tsp Dried oregano

Instructions

  • In a bowl, submerge the onion in vinegar. Add the tomatoes to the bowl. Let sit for 20 minutes. Drain the vinegar. Stir in the oil, oregano, and season with salt and pepper to taste.
