Pickled Cucumber and Onion

Ingredients

  • 1/2 cup Red wine vinegar
  • 1 cup Cucumber sliced into rounds
  • 1/4 cup Red onion shaved

Instructions

  • Place all the ingredients in a bowl. Push the cucumber and onion down so they are mostly submerged in the vinegar. Add more vinegar if needed.
  • Let sit for 20 minutes or longer. Drain well before serving.
