Peruvian Chicken

Ingredients

  • 1 lb Chicken breast boneless skinless
  • 4 cloves Garlic finely minced
  • 2 tbsp Extra-virgin olive oil
  • 2 tbsp Lime juice
  • 2 tsp Honey
  • 1 tbsp Ground cumin
  • 2 tsp Paprika
  • 1 tsp Ground coriander
  • 1 tsp Dried oregano

Green Sauce:

  • ½ cup Sour cream
  • ½ Jalapeño pepper diced (optional)
  • 1 clove Garlic
  • 1 cup Fresh cilantro
  • ¼ tsp Salt
  • 1 tbsp Lime juice

Instructions

  • In a bowl add garlic, oil, lime juice, honey, cumin, paprika, coriander, oregano and season with salt. Stir. Toss it with the chicken in a bowl, coating all sides well. Marinate while the grill heats up or overnight for more flavor.
  • Preheat a grill on medium heat.
  • Green Sauce: Place all the ingredients in a blender and blending until relatively smooth, scraping down the sides if necessary. Set aside.
  • When the grill is hot, grill the chicken, searing both sides well, then turn the heat down or move the chicken to a cooler side of the grill to allow the chicken to cook through to an internal temperature of 160 degree using a thermometer.
  • Serve the chicken with the green sauce.
