In a bowl add garlic, oil, lime juice, honey, cumin, paprika, coriander, oregano and season with salt. Stir. Toss it with the chicken in a bowl, coating all sides well. Marinate while the grill heats up or overnight for more flavor.
Preheat a grill on medium heat.
Green Sauce: Place all the ingredients in a blender and blending until relatively smooth, scraping down the sides if necessary. Set aside.
When the grill is hot, grill the chicken, searing both sides well, then turn the heat down or move the chicken to a cooler side of the grill to allow the chicken to cook through to an internal temperature of 160 degree using a thermometer.
Serve the chicken with the green sauce.
