Prepare the Soft Boiled Eggs: Bring a small pot of water to a gentle boil. Once boiling, add the eggs carefully. Reduce heat to medium and simmer for 6-7 minutes for soft boiled eggs with runny yolks.
Once done, remove the eggs and immediately place them in a bowl of cold water for 1-2 minutes to stop the cooking process.
Peel the eggs and set them aside.

Stir in the peanut butter, chocolate chips, and honey or maple syrup (if using) until well combined.
Once the oatmeal reaches your desired consistency, remove it from the heat.
Assemble the Oatmeal: Spoon the oatmeal into two bowls. Top each bowl with sliced bananas.
