Pasta Skillet

Ingredients

  • 8 oz Penne pasta
  • 1 tbsp Extra-virgin olive oil
  • 4 tbsp Onion diced
  • 1 pound Ground turkey
  • 10 oz Fire roasted tomatoes diced
  • 1/4 cup Ketchup
  • 3 tbsp Yellow mustard
  • 1 tbsp Worcestershire sauce
  • 2 oz Mozzarella cheese shredded
  • 2 oz Cheddar cheese shredded
  • 4 slices Crusty bread lightly toasted
  • 2 tbsp Scallions chopped

Instructions

  • Cook the pasta according to the instructions on the package. Reserve 1 cup of the pasta water. Drain the pasta and set aside.
  • While the pasta is cooking, heat the oil in a non-stick pan or skillet over medium heat. Add the onion and ground turkey, breaking apart the meat, until no longer pink. Season with salt and pepper.
  • Stir in the tomatoes, ketchup, mustard, and Worcestershire sauce; simmer for 10 minutes. (If it looks dry add a little pasta water to the pan.) Taste and adjust the seasoning with salt if needed.
  • Mix in the cooked pasta and mozzarella cheese, stir to combine well, then remove from heat.
  • Top with cheddar cheese.
  • Preheat the oven broiler on low. Toast the bread and place the pan underneath the broiler to melt the cheese.
  • Garnish with chopped scallions.
