Cook the pasta according to the instructions on the package. Reserve 1 cup of the pasta water. Drain the pasta and set aside.
While the pasta is cooking, heat the oil in a non-stick pan or skillet over medium heat. Add the onion and ground turkey, breaking apart the meat, until no longer pink. Season with salt and pepper.
Stir in the tomatoes, ketchup, mustard, and Worcestershire sauce; simmer for 10 minutes. (If it looks dry add a little pasta water to the pan.) Taste and adjust the seasoning with salt if needed.
Mix in the cooked pasta and mozzarella cheese, stir to combine well, then remove from heat.
Top with cheddar cheese.
Preheat the oven broiler on low. Toast the bread and place the pan underneath the broiler to melt the cheese.
Garnish with chopped scallions.
