Mix flour, baking powder, sugar, and a pinch of salt in a bowl. Whisk in the egg, vanilla, and slowly whisk in the milk a little at a time (may not need all of it) until there are no lumps and a thick batter forms.
Heat a large nonstick pan or skillet over medium heat, and grease lightly with nonstick spray.
Pour 1/4 cup portions of batter into the pan.
Once bubbles start to appear on the top flip the pancakes with a spatula and cook until golden brown.
