Orzo Salad

Ingredients

  • 1/3 cup Orzo
  • 1 tsp Extra-virgin olive oil
  • 1/2 tbsp Red onion chopped
  • 1/4 tsp Lime juice to taste
  • 1/4 cup Cucumber chopped
  • 1 tbsp Fresh cilantro chopped

Instructions

  • Cook the orzo in a boiling pot of salted water according to the instruction on the package. Once cooked drain well.
  • Place oil, onion, lime juice, cucumber, and cilantro in a blender or food processor. Blend until smooth. Season with salt and pepper to taste. Set aside.
  • Mix the orzo with the sauce. Season with salt to taste.
