Instructions
Heat the oil in a pot over medium heat until it reaches 375°F.
Cut the onion into 1/2 inch thick round slices and gently separate them into rings.
Whisk together the flour, paprika, salt.
Toss the onions in flour, then dip in the egg, and back into the flour, coating very well.
Working in small batches, place the onions into the oil and fry until they are a dark golden brown.
Remove from the oil onto a paper towel-lined plate and immediately season with salt and pepper. Serve with ketchup if desired.
