Lay the bacon in a skillet on medium heat. Cook on both sides until golden brown and crispy. Set aside on paper towels to drain excess grease.
Make omelet: Heat a non-stick pan over medium heat. Once hot, add the butter. Saute the onion and pepper until softened and golden brown. Pour in the eggs and reduce the heat to low. Use a spatula to pull the cooked eggs into the center, letting the liquid egg fill the space behind it. Continue going around the pan, pulling the eggs toward the center until the eggs are nearly set. Sprinkle cheese over the egg and transfer the pan under the oven broiler to melt the cheese. Fold the omelet in half.
Make toast: Toast the bread in a toaster oven. Spread the butter on the toast, then spread with jam and cut in half.
