Olive Cucumber Crostini

Ingredients

  • 8 slices Crusty bread sliced 1/4 inch thick and drizzled with oil
  • 1 tbsp Extra-virgin olive oil plus more for drizzling the crostini
  • 1/4 cup Cucumber minced
  • 2 tbsp Red onion minced
  • 2 tbsp Kalamata olives minced
  • 2 tbsp Green olives minced
  • 1/4 tsp Dried oregano

Instructions

  • Drizzle the bread slices with olive oil. Toast the bread slices under the oven broiler on low or in a toaster.
  • Mix together the remaining ingredients. Season with salt and pepper to taste.
  • Serve the mixture with the crostini.
