Prepare all ingredients as listed.
Optional step: Toast the almonds and sunflower seeds in a dry skillet over medium heat for 2 to 3 minutes while stirring often. Let them cool slightly.
In a mixing bowl, combine granola, chopped apricots, currants, almonds, and sunflower seeds.
Divide the yogurt between two bowls. Spoon the muesli mixture evenly over the top. Garnish with sliced apple and drizzle with honey.
For the juice, combine pear, celery, cucumber, parsley, ginger, orange, and water in a blender or juicer. Blend until smooth. Strain if you prefer a clearer juice.
