Prepare ingredients as instructed above.
Toast nuts and seeds (optional): In a dry skillet over medium heat, toast almonds and sunflower seeds for 2–3 minutes, stirring often. Cool slightly.
Mix muesli base: In a mixing bowl, combine granola, currants, chopped dried apricots, toasted almonds, and sunflower seeds.
Assemble bowls: Portion the yogurt. Spoon muesli mixture evenly on top. Garnish with apple slices and drizzle with honey.
Make juice: In a blender or juicer, combine pear, celery, cucumber, parsley, ginger, orange, and water. Blend until smooth. Strain if desired.
Serve the muesli alongside green juice.
