Prepare the ingredients per the instructions above.
Toast Nuts & Seeds (optional): In a dry skillet over medium heat, toast almonds and sunflower seeds for 2–3 minutes, stirring often. Set aside to cool slightly.
Mix Muesli Base: In a mixing bowl, combine granola, currants, chopped dried apricots, toasted almonds, and toasted sunflower seeds.
Assemble Muesli Bowls: Portion yogurt. Spoon muesli mixture evenly over yogurt. Top with sliced apple and honey drizzled on top.
Make Green Juice: In a high-speed blender or juicer, combine green pear, celery stalk, cucumber, parsley, ginger, and orange wedges with peel. Add cold water as needed to help blend. Blend until smooth, then strain through a fine mesh sieve or nut milk bag if a smoother juice is preferred.
Serve muesli bowl with green juice, and enjoy!
