In a separate glass or pitcher, combine lemon juice, maple syrup or honey, chia seeds, sparkling water, and fresh mint. Stir well and let sit until the chia seeds bloom and slightly thicken.
Serve the tacos with tortilla chips and guacamole alongside the sparkling chia fresca.
