Ingredients

Mexican Beef Street Tacos

  • 1 tsp Extra-virgin olive oil
  • 8 oz Ground beef
  • 1 tsp Chili powder
  • 1/2 tsp Ground cumin
  • 1/2 tsp Garlic powder
  • Salt to taste
  • Black pepper to taste
  • 4 Soft taco shells
  • 1/4 cup Onion diced
  • 1/4 cup Tomatoes diced
  • 1/4 cup Monterey Jack cheese shredded
  • 1/2 cup Romaine lettuce shredded

Chips and Guac

  • 1 Avocado
  • 2 tsp Fresh cilantro chopped
  • 1 tsp Lime juice
  • 1/4 tsp Garlic powder
  • Salt to taste
  • Black pepper to taste
  • 2 oz Tortilla chips

Sparkling Chia Fresca

  • 1/2 cup Lemon juice
  • 2 TBSP Maple syrup or honey
  • 1/2 tsp Chia seeds
  • 16 oz Sparkling water
  • 2 sprigs Fresh mint

Instructions

  • Prep all ingredients according to the ingredient list.
  • In a bowl, season the ground beef with chili powder, ground cumin, garlic powder, salt, and black pepper.
  • Heat extra-virgin olive oil in a skillet over medium heat. Add the seasoned ground beef and cook, breaking it into small pieces, until fully browned. Remove from heat.
  • Warm the soft taco shells in a pan over medium heat until pliable on both sides.
  • Fill the taco shells with the cooked beef. Top with diced onion, diced tomatoes, shredded Monterey Jack cheese, and lettuce.
  • In a bowl, mash the avocado until smooth. Add fresh cilantro, lime juice, garlic powder, salt, and black pepper. Stir until well combined.
  • In a separate glass or pitcher, combine lemon juice, maple syrup or honey, chia seeds, sparkling water, and fresh mint. Stir well and let sit until the chia seeds bloom and slightly thicken.
  • Serve the tacos with tortilla chips and guacamole alongside the sparkling chia fresca.
