Mediterranean Tuna Wrap

Ingredients

Wrap

  • 2 TBSP Extra-virgin olive oil
  • 2 tsp Lemon juice
  • 2 TBSP Mayonnaise
  • 10 oz Chunk light tuna fish drained well
  • 1/3 cup Celery minced
  • 1/4 cup Carrot peeled and minced
  • 1/4 cup Cucumber diced small
  • 1/4 cup Red onion minced
  • 2 TBSP Kalamata olives chopped
  • 1 cup Baby spinach
  • 1/4 cup Tomato diced
  • 2 Tortilla wraps
  • 2 oz Potato chips
  • 2 Pickle spears

Cucumber Spritzer

  • 24 oz Sparkling water cold
  • 8 slices Cucumber

Instructions

  • Prep the ingredients per the instructions above.
  • In a bowl mix together the olive oil, lemon juice, mayo, tuna, celery, cucumber, red onion, olives, tomato, and season with salt and pepper to taste.
  • Place the spinach on the wrap, and evenly add the tuna mixture. Fold in the ends and roll up.
  • Mix together the sparkling water and cucumber. Serve over ice if desired.
  • Cut in half and serve with chips, pickle, and spritzer.
