Mediterranean Tuna Wrap

Wrap
- 2 TBSP Extra-virgin olive oil
- 2 tsp Lemon juice
- 2 TBSP Mayonnaise
- 10 oz Chunk light tuna fish drained well
- 1/3 cup Celery minced
- 1/4 cup Carrot peeled and minced
- 1/4 cup Cucumber diced small
- 1/4 cup Red onion minced
- 2 TBSP Kalamata olives chopped
- 1 cup Baby spinach
- 1/4 cup Tomato diced
- 2 Tortilla wraps
- 2 oz Potato chips
- 2 Pickle spears
Cucumber Spritzer
- 24 oz Sparkling water cold
- 8 slices Cucumber
Prep the ingredients per the instructions above.
In a bowl mix together the olive oil, lemon juice, mayo, tuna, celery, cucumber, red onion, olives, tomato, and season with salt and pepper to taste.
Place the spinach on the wrap, and evenly add the tuna mixture. Fold in the ends and roll up.
Mix together the sparkling water and cucumber. Serve over ice if desired.
Cut in half and serve with chips, pickle, and spritzer.
