Mediterranean Tuna Toast

Ingredients

  • 4 slices Sourdough bread lightly toasted
  • 2 cups Baby spinach
  • 4 tbsp Extra-virgin olive oil
  • 2 tsp Lemon juice
  • 10 oz Canned albacore tuna drained, (or your preference of tuna)
  • 1/2 cup Celery diced small
  • 1/3 cup Red bell pepper diced small
  • 1/4 cup Pepperoncini chopped
  • 1/4 cup Red onion diced fine
  • 1/2 cup Kalamata olives pitted and halved
  • 1/2 cup Grape tomatoes diced

Instructions

  • Lightly toast the bread. Then top with spinach.
  • In a bowl, mix together the remaining ingredients. Season with salt and pepper to taste. Add a little more olive oil as needed. Add more lemon if needed to brighten up the flavors. Be careful not to add too much or make it too lemony. Refrigerate
  • Spoon the tuna over the bread before serving.
